是誰打破大自然保護人類的藩籬? Who breaks the nature's barriers of protecting human?

2019年新型冠狀病毒引起俗稱的武漢肺炎,傳染率相當快速,散播全球26個國家,爆發至今2個多月已造成636死亡,超越SARS當年在中國大陸的死亡人數349人,確診病例突破3萬也超過當年SARS全球病例數。世界衛生組織(WHO)宣布武漢肺炎構成「國際關注公共衛生緊急事件」!

WHO共宣布6次國際公衛緊急事件,其中2009年的新流感病毒(H1N1)、2014年西非和2019年剛果伊波拉病毒(Ebola)以及現在的武漢肺炎,這些感染人類的新興病毒不是來自養殖動物就是來自野生動物(表)

原本,病毒想換個宿主,遠比人們換份工作還要難上加難。例如,呼吸道病毒感染具有宿主的特異性,本來是無法跨過物種去傳播,這是一種大自然的保護作用;只要我們不要打破這個自然界保護人類的藩籬,動物的病毒就不會跳躍感染到人類。

以新流感(H1N1)為例,它是在骯髒擁擠陰暗養豬場的超級病毒培養溫床,讓禽、豬和人型4種流感病毒在豬體內基因重組而成讓流感病毒演變成為對人類唾液酸受體的親和力遠大於動物唾液酸使得原本只能感染禽或畜的病毒能夠有效地人傳人,迅速造成H1N1在全球37個國家大流行。至今新流感仍在流行台灣這波流感高峰的死亡個案,許多是感染H1N1,而大家忘記它是來自養豬場

同樣,會感染人的冠狀病毒也是來自動物宿主的傳染窩。例如,源自蝙蝠的SARS冠狀病毒是經由大陸的果子狸活宰市場,MERS冠狀病毒則是經由中東的單峰駱駝養殖場,而武漢肺炎冠狀病毒來自武漢的野生動物批發市場(野味穿山甲),讓冠狀病毒擺脫了大自然的屏蔽,經由上述野生動物的中間宿主而跳躍感染到人類。

那我們是如何在不知不覺之中,無意間打破了自然界的保護藩籬,讓“豬瘟或雞瘟”可以變成“人瘟”的呢?那就是我們吃肉蛋奶的習慣使然!由於我們習慣吃動物的肉蛋奶,結果造成集中的禽畜養殖場越來越大、越多,因而重組的新病毒就繼續會出現,那麼新興的人畜共通傳染病將會一波一波不斷的上演,沒完沒了!

如果我們不希望歷史一再重演,是該改變傳統飲食習慣的時候了。請以糙米、豆類、全麥或藜麥等植物的一手蛋白質,來取代肉蛋奶的二手蛋白質,不但能夠攝取到足夠蛋白質,而且可以減少心血管疾病、糖尿病和癌症等慢性病! 2016年《美國胸科學會年刊》的研究報告,發現每天攝取來自水果、蔬菜和豆類的纖維超過17公克的人,他們的肺功能比較健康,顯示含有豐富纖維的植物性飲食能夠改善肺部的發炎。如果身體偏寒的朋友,推薦煮菜時加進老薑、辣椒或薑黃入菜,也可以喝薑湯和吃含有薑黃的咖哩,能夠增強免疫力並有祛寒的功效!
